Easy Classic Meatloaf

My dad did most of the everyday cooking when I was growing up. Most often dinner was all about what we had at hand. I remember him making meatloaf with ritz crackers, saltines, and oats. But my favorite is made with bread crumbs. You can make your own own breadcrumbs by crunching up stale bread chunks in a baggie using a rolling pin like my dad did or throwing them into the food processor. For my recipe I just picked up some breadcrumbs from the market.

What You Need:

1 egg
2 lbs ground beef
1 1/2 c breadcrumbs
1/4 c water (milk if you prefer)
1 c ketchup
2 Tbps brown sugar
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder

You could throw in 1/3 c onions if your family doesn’t loath onions like my family does. Or you could even toss in some diced green pepper.

What You Do:
1. Preheat oven to 350 degrees. Coat a baking pan with cooking spray or cooking oil.

2. In a large bowl mix all the ingredients using only 1/3 c of the ketchup in the mix. Adjust amount of water or milk as needed. You want the mixture to stick together but not be too wet.

My kids were stoked on helping with this part which was totally fine by me.

3. Put the meatloaf mixture onto your pan and shape it into the loaf shape. Put the rest of the ketchup all over the outside of the meatloaf.

4. Bake uncovered for 1 hour.

It was so perfect and yummy that my family almost didn’t let me snap a photo before eating it all. I never really thought my kids would like meatloaf but they loved it!
