Pretty Mini Pies for Valentine’s Day

My secret is out. I like easy food. But it has to be good. My time is precious and unless my kids are in there with me, I’m not looking to spend the whole day in the kitchen. I can and have made great pie crust by hand but for these pretty little Valentine’s Day treats, I chose Pillsbury Refrigerated Pie Crust. The baked crust turned out flakey and delicious!

What You Need:

2 Boxes of Pillsbury Refrigerated Pie Crust

2 Cans of Pie Filling (You could use any that you like. I chose cherry and strawberry because I wanted the red color for my finished pies.)

1 Egg

Sugar

What You Do:

Preheat the oven to 350 degrees. Grease a muffin/cupcake tin with vegetable oil or butter. The Pie crust needs to be left to room temperature for about 15 minutes. Then roll it out on a flat surface.

Cut 4 inch circles to be the bottom crusts of your pies. Squish the crust down into the pan leaving some sticking out around the top edges. This will give the top crusts something to stick to.

Spoon in about 2 tablespoons of filling into each crust.

Next, cut out the circles for the top crusts. Take a small heart-shaped cookie cutter and cut the vent holes in the top crusts.

Use a fork to crimp the top crusts to the bottom crusts. I used the little hearts that I cut out to decorate the tops of the pies that I decided to leave open. I also decorated those with a cute little twisted crust. Brush on some egg wash between crusts to help them stick.

Whisk the egg and uses a pastry brush to egg wash the finished crust before putting the pies in the oven. Sprinkle a little sugar over the crusts.

Bake for 20-25 minutes or until the crust is golden. Allow to cool  30 minutes if you want them to come out of the pan in one piece.
